My kids love biriyani or fried rice.. So most of the time Sunday is time for some fried rice.. it also works fine for me as these one pot meals are little easy (well one of my friend says typical south Indian lunch which sambar, rasam, 1 kootu, 1 poriyal and yogurt is easier. I guess it goes with each and everyone’s preference). This rice is quite rich and doesn’t require any side dish other than simple raita. This is good for a party / can be part of your guest menu
Ingredients
For Gravy
Mixed vegetable – 2 cups (I have used carrot, beans, cauliflower and bell pepper)
Fresh yogurt – 1/2 cup
Oil or Ghee – 2 tablespoon ( I have used 1 tablespoon of Ghee and 1 tablespoon of oil)
Raisin – 1 teaspoon
Cashew – 1 tablespoon
Almond – 1 tablespoon +1 Tablespoon
Ginger Paste – 1/2 teaspoon
Garlic paste – 1 teaspoon
Onion – 1 (medium. Sliced thinly)
Garam masala – 1/2 teaspoon
Cinnamon – 1/2 inch
Cloves – 2
Cardamom – 1
Shah Jeera / Caraway seeds – 1 teaspoon
Red chilli powder – 1/2 teaspoon
Salt to taste
Melon seeds – 1 tablespoon
Coconut – 1 tablespoon
Saffron – Few strands
Hot milk – 1/4 cup
Mint leaves few
Rose Water – 2 teaspoon
Lemon juice – 1 teaspoon
Lemon juice – 1 teaspoon
For Rice
Bastmati rice – 1.5 cup
Cinnamon – 1 inch
Cloves – 2
Cardamom – 1
Bay leaf – 1
Salt to taste
Method:
After 30 mins remove the skin from Almond and grind Almond, melon seeds and coconut into smooth paste. and keep it aside.
Now heat the oil / Ghee. Add Cashew raisin and fry till brown color. take it out. Now add 1/4 of onion and fry till brown color. Keep it aside.
Add Shah Jeera, Cardamom, cinnamon, cloves and fry till nice armoa released. Add Ginger, garlic paste. Fry till raw smell goes off. Now add all the vegetables. Fry for 2 mins.
Add 1 cup water, Garam masala and chilli powder. Mix well, Add Saffron soaked milk. Add required salt and pressure cook it for 1-2 whistles.
When it cool down and ready to open open the lid and check for thickness. Add lemon juice mix it well. The gravy has to be little thick for layering. If not just let it boil after adding mint leaves
Once complete close it with Aluminium foil place the container on a flat pan and cook it in low flame for 15 mins.
