There are some dishes which I do regularly for quick snack which are traditionally done during festivals. Sweet pidi kozhukattai is one such dish. It is also one of favourite dish for my family. I normally do it whenever I make idiyappam I try to make some kozhukattai also esp this sweet version or peanut kozhukattai. And of course vinayagar chaturthi festival is not complete without these tasty kozhukattais
Ingredients:
Rice flour – 1 cup
Jaggery – 1/4 cup
Cardamom powder – 1/4 teaspoon
Salt a pinch
Cooked Moong dal – 2 tablespoon (optional)
Grated coconut – 1 tablespoon (optional. I didn’t use it)
Method:
In a heavy bottom pan or non stick pan add jaggery and 1 cup of water. Boil it till jaggery is melted. Once melted drain the jaggery to remove the impurities and bring back to boil. add cardamom powder, pinch of salt, cooked moong dal and rice flour. Mix well and let the rice flour get cooked. Switch off the flame.
When the dough is still warm knead well and make smooth batter. Take a small balls and press them between fingers to get oval shape pidi kozhukattai. Heat the idli cooker or steamer. If you are not using cloth grease the plate. Steam the kozhukattai for 7 mins or when you touch it it shouldn’t stick to your fingers.
Serve hot.. I love it next day!
