I always had this belief that any rice / biryani with name of a place it is really good (otherwise it won’t be that famous right?) Mostly these biryani are non-veg. When I saw this at Chitra’s place, I bookmarked it. My kids love the spicy rice as well as meal maker. So I was pretty sure they will love this. This is perfect for weekend / party meals. I have used less spicy version of Red chillies and I got a lovely color.
Ingredients:
Rice – 1 cup (I have used normal ponni rice)
Soya chunks – 3/4 cup
Onion – 2 (medium)
Tomato – 1 (Medium)
Red chillies – 10-12
Garlic Paste – 1.5 tablespoon
Ginger – 1 tablespoon
Mint Leaves – 1/4 cup
Lemon juice – 1 teaspoon (As required. Optional)
Salt to taste
Curd – 2 tablespoon
Oil – 4 tablespoon
Cinnamon – 1 inch
Cloves – 2
Cardamom – 2
Method:
Wash the rice and drain the water. Keep it aside. Soak chillies in hot water. Grind to smooth paste with diced onion. Keep it aside. Place Soya chunks in hot water leave it for 5 mins. Drain the water and squeeze extra water using hand. Keep it aside
Heat oil in a pan add cinnamon, cloves and cardamom. Fry for 10 sec. Add Garlic, ginger paste. Fry for a min. Add grinded onion, chilli paste.
Fry till raw smell goes off. Add tomatoes. Fry till it is mushy. Add soya chunks and mix well. Cook for 2 mins.
Add soya chunks and mix well. Cook for 2 mins. Add mint leaves, curd and mix well. Add 2 cup water, salt and rice and cook it with lid closed.
Add chopped coriander leaves, lemon juice mixed well. Switch it off
Serve hot.
