Biscoff Cheesecake has been on my to-try list for a long time. You may have noticed my fondness for cheesecakes based on the number of cheesecake recipes on this blog. Aside from the taste, making cheesecake is simpler / easier than making regular cakes.

 

My second son’s favourite flavour is Biscoff, so I wanted to make a Biscoff cheesecake for his birthday. I used my regular cheese cake recipe and tweaked it for this. If you like Biscoff, this is a must-try recipe. You don’t believe me? not a problem! Please try and notify me. The base is Lotus Biscoff, and the filling is Biscoff-flavored cheese. I didn’t top it with anything because we don’t like cream toppings, but you can use whatever toppings you want.

 

 

Ingredients for making Biscoff Cheesecake

 

For Crust

  • Lotus Biscuits – 200g
  • Melted Butter – 3-4 tablespoon

 

For filling

  • Cream cheese – 500g
  • Sour Cream – 250g
  • Sugar – 1 cup
  • Vanilla essence – 1 teaspoon
  • Sea Salt – a pinch
  • Corn Starch or Potato Starch – 2 tablespoon
  • Lemon Juice – 1/2 teaspoon
  • Biscoff butter (I have used crunchy) – 1/4 cup

Step by step instruction to make Biscoff Cheesecake

 

Step 1: Take the digestive and make a crumbs.

 

 

 

Step 2: Melt the butter Mix in melted butter and crumbs and place mixture into a baking pan. I have used spring-form pan. Press the mixture down to make a smooth base.

 

 

Step 3: Pre heat the oven and bake the crust for 8 mins. Let it cool down completely

 

Step 4: Make sure all ingredients under for filling is in room temperature. Add all the ingredients in the broad vessel. Using hand held beater or batter mixer whip it o the smooth batter

 

 

 

Step 5: Pour this over the crust. : Pre heat the oven at 180 degree C and Bake the case for 60 mins or till inserted toothpick comes out clean. Let it cool down in the oven for 1 hr. Take it out and completely cool it down

 

 

Step 6: Wrap it with cling wrap. And refrigerate it for min 2 hours or over night

Notes

 

  • Do not over-mix the cheesecake batter
  • Leave cheesecake in the cooling oven for 1 hour
  • Cool completely at room temperature before refrigerate it
  • you can freeze it for longer self life
  • My son loves little burnt top so I let it bake for 10 mins more
  • you can add broken Lotus Biscoff biscuits in cheese batter

Notes

  • Use white version of sweet potato for this recipe
  • I get peanut powder otherwise make powder with dry roasted peanut
  • Sweet potato tends to stick to the pan, so make sure you use a heavy bottom pan 
  • Keep grated sweet potato in water till you need it. This will prevent the dis-colouring

  • Highly nutritious. Sweet potatoes are a great source of fiber, vitamins, and minerals.
  • The fiber and antioxidants in sweet potatoes can be beneficial for gut health
  • Orange sweet potato is high in beta carotene.
