Broccoli Walnut Pesto Pasta

Pasta! tell me which kid doesn’t like. My kids are no exception. Pasta is the dish in which I can sneak in vegetables that they don’t like it. I wanted to try the less creamy version of broccoli pasta. So I have decided to do broccoli walnut pesto pasta. Kids enjoyed it. I loved the taste of it. Finally I found one dish in which I can tolerate broccoli. Yahoo! now I can say I eat all vegetables…
Ingredients


Pasta – 1 cup
Broccoli – 1.5 cup (cut into small flowerlets)

Walnuts – 1 tablespoon
Garlic – 10 Chopped finely
Cumin seeds – 1/2 teaspoon
Pepper corn – 1/4 teaspoon
green chillies – 2-3 (adjust to your spice level)
Coriander Leaves – 1 cup (chopped roughly)
Salt to taste
Lemon juice – 1 tablespoon
Olive oil – 2 tablespoon
Grated Parmesan  Cheese – 2 tablespoon 



Method:


Roast the walnut till nice aroma comes.
Boil 3 cups of water and salt and cook broccoli in it. Broccoli gets cooked very fast. For me it takes only 4-5 mins. Drain the water and keep it aside to cool

Heat 1 teaspoon of oil. Fry the coriander leaves and garlic.Let it cool down. When it is cool down add green chilli, roasted walnut, 1/2 teaspoon cumin seeds and 1/4 teaspoon of pepper powder. Add 1 tablespoon of lemon juice and 1 tablespoon of cheese  Grind to smooth paste. Add cooked broccoli and pulse to coarse paste.




Cook the pasta in a large pot of salted water according to the package directions. Drain, Keep it aside. 

Toss the pasta with the pesto in low flame. Once it is fully mixed serve hot. Garnish it with cheese and walnut
