Edamame Spaghetti with Green Sauce

During my last trip to US I wanted to get some healthy noodles. Was talking to my sis about it. She was recommending this Edamame Spaghetti. She is particular about healthy food for her family. When I checked the ingredients I was surprised as normally there will be a very long list of ingredients this one had only a couple of it. So my sister wanted me to try it. I was very skeptical about the taste so I took a long time to try. Once I tried with green pesto / Green sauce it was so yummy.. I have to order few boxes during my next trip or have to find out whether we get it in Singapore. If you don’t get it you can use this sauce with any of your favourite pasta

Ingredients:


For Green Sauce
Coriander leaves – 1 cup
Sweet Basil – 10
Kale – 7
Almonds – 20
Walnuts – 5-7
Small onion / Shallots –  5-7
Garlic – 5 pods
Grated cheese – 1/4 cup
Green Chillies – 3 (adjust to taste)
Avocado – 1/2 medium size
Salt to taste
Olive oil – 1/4 cup


For Pasta


Pasta of your choice – 2 cups (cooked)
Peas – handful (optional)



Method:


Grind the nuts, onion, garlic, Geen chillies and avocado first. Add Coriander leaves, basil and kale. Grind to smooth paste. I have added 1/4 cup of water

Add rest of the ingredients and grind to smooth paste

Cook the past per instruction. Keep it aside

Heat the pan and add grinded paste. Fry for 3-5 mins.  Add cooked Pasta Mix well. Cook for another 3 mins

Add peas if adding. Serve hot
