Every time I visit my friend she does this plain coconut milk biryani with some spicy / rich side dish. I really love the slight flavour of coconut with little spices.. Esp the side dish she serves. I had this recipe from her and it is very simple. It is perfect for party also. It has a slight sweet taste because of raisin. I find that gives unique taste to this rice. So don’t skip it
Ingredients
Rice – 1 cup (Long variety)
Coconut milk – 1 cup
Water – 1 cup
Salt to taste
Coriander leaves- 2 tablespoon
Mint leaves – 2 tablespoon
Onion – 1 medium
Raisin – 1 tablespoon
Bay leave – 1
Clove – 3
Cardamom – 2 to 3
Green chillies – 4 (or to your spice level)
Oil – 2 teaspoon
Method:
Wash and soak the rice for 15 mins. Drain it and keep it aside.
Soak the Raisin in hot water. Heat a teaspoon of oil Add onion and fry till transparent. Grind it with green chillies and soaked Riasin.
Heat rest of the oil add bay leaves, clove, cardamom and fry for 30 sec. Add rice and fry for 30 sec.
Add Grinded paste, coconut milk, Mint leaves, 1 cup of water and salt. Close it with the lid
Cook it and add coriander leaves. Mix it well.
Transfer it to another vessel. Cover it with aluminium foil and place a weight on top of it for 30 mins.
Serve hot
