My favorite type of milk tea is Irani tea. Whenever I visit India, I make sure to have it at least once during my trip. Among the various places I’ve tried, the tea at Paradise restaurant stands out as my favorite. As a tea enthusiast, I prefer tea over coffee. I have come across mentions of Irani tea in Tamil stories, which piqued my curiosity. By chance, I had the opportunity to taste Irani tea for the first time, and since then, I haven’t looked back.
Although I attempted to recreate the taste at home a few times, I couldn’t quite match it. Determined to find a solution, I reached out to a friend from Hyderabad who shared a recipe with me. According to her, the key to achieving the authentic taste lies in how you prepare the tea decoction. She recommended sealing the edges while making the decoction, which yields the best results. This method surpasses using pressure cookers for preparing the decoction. The taste was remarkably close to what I had experienced before, so I have decided to share the recipe.
Tea leaves -2 teaspoons ( I had masala tea mix so I have used it)
Sugar to taste (I have used brown sugar)
Cardamom – 4
Milk – 1 cup (Full fat milk)
Condensed milk – 2 tablespoon For sealing
All-purpose flour – 1/2 cup or wheat flour
Step-by-step instructions to make Irani tea:
Add water to the flour and make stiff dough. Heat water with tea leaves, cardamom. Close it with lid seal it with dough. Reduce the flame and boil for 20 mins.
Once done remove the dough. Add milk
Add Condensed milk continue to boil till it reduces to 3/4th
Once the milk is ready strain it

while decoction is getting ready in parallel Boil milk. Add Condensed milk continue to boil till it reduces to 3/4th
