I love to try different biryanis. I have tried this Jackfruit seeds vegetable biryani last season but I couldn’t make the final pic. I want to try this during this season. This is the perfect blend of spices and I have used store-bought garam masala but you prefer to make your biryani masala you can do it by dry roasting Cinnamon – 1 inch, cloves- 3, Nutmeg – 1/8 teaspoon, Cumin seeds – 1/2 teaspoon, Cardamom – 3, Fennel seeds – 1/4 teaspoon. This is perfect for kid’s lunch box too. My kids loved it. Do try out in this season and let me know how it turned out
Ingredients:
Basmati Rice – 1.5 cups
Onion – 1 (sliced into thin slices. I have used white onion)
Ginger / Garlic paste – 1.5 teaspoon
Tomatoes – 1 (chopped finely)
Ghee / Oil – 1 tablespoon (I have sued Ghee)
Mixed vegetables – 3/4 cup (Carrot, Beans, Cauliflower)
Jackfruit Seeds – 20 pieces
Salt to taste
Shai jeera – 1 teaspoon
Bay leaves – 1
Cinnamon – 1-inch stick
Cardamom – 2
Cloves – 2
Star spice – 1
Garam masala – 1/2 teaspoon
Nutmeg powder – 1/8 teaspoon
Turmeric powder – 1/2 teaspoon + 1/2 teaspoon
Red chili powder – 1/2 teaspoon (add more if required)
Yogurt – 1/4 cup
Cashew – 10 pieces
Almond – 10 pieces
Milk – 1/4 cup
Mint leaves – 10 (Roughly crushed)
Coriander leaves – 1 tablespoon (chopped finely)
Method:
Soak rice for 10 mins. Drain the water and keep it aside. Soak Cashew, Almonds in warm water for 1 hr. Grind it to smooth paste with milk. Keep it aside
Remove the white outer skin of jackfruit seeds. Cut that into 2. Pressure cook it with salt and turmeric (I cooked it for 3 whistles). Drain the water (keep the water) and keep it aside
Heat pan and add ghee. Add Cumin seeds, Bay leaves, Clove, Star spice and Cardamom. Fry till nice aroma released. Add Onion and fry till brown color
Add ginger, garlic paste fry for 2 mins in medium flame. Add Tomatoes and fry till mushy
Add Grinded nuts, 1/2 cup of water and mix well. Continue to cook for 2-4 mins in low flame, Add Mint leaves, Turmeric powder, red chili powder, garam masala, nutmeg, and Salt. Fry till oil separates from it. Stir in between.
Add vegetables. And 2 cups of water ( use the Jackfruit seeds cooked water). Continue to cook until vegetables are 3/4th done.
Reduce the flame completely. Add Yogurt and Cooked Jackfruit seeds. Add another cup of water. Let it boil
Add Rice and mix well. Check for Salt. Adjust it if needed. Close it with lid
Continue to cook for 3 mins in medium flame. Open the lid and mix it. Cook for another 3 mins. Give a gentle mix again. Cook for till rice is done. Add chopped coriander leaves. And mix it. Switch it off and close it with lid for another 3-5 mins.

The briyani looks awesome, jackfruit seeds should have made it more tastier..
