I love one pot meals that saves time yet you can impress your family and guests with it. Normally when we go out we don’t order rice. For a change other day when we visited kailash parbat we have decided to try some rice. I didn’t want to order normal peas or Jeera pulav. Wanted to try something new. When I saw this Jaipuri pulao it sounded rich and interesting. So decided to give it a try. It was really tasty. So I have tried at home.
Ingredients
Bastmati rice / Bastmathi rice – 1 cup
Mixed vegetables – 1/2 cup
Butter- 1 tablespoon
Ginger paste – 1/2 teaspoon
Garlic paste – 1 teaspoon
Oil – 1 tablespoon
Cloves – 3
Bay leaf – 1
Cardamom – 1
Cinnamon – 1 inchCoriander leaves – 1 tablespoon (finely chopped)
Cashew nuts- 1 teaspoon
Raisin – few (optional)Salt as needed
To grind
Onion – 1
Cashewnuts – 1 tablespoon
Coriander powder – 1/2 teaspoon
Cumin seeds powder – 1/2 teaspoon
Green chillies – 2 or 3 (adjust to your spice level)
Fresh cream – 1 tablespoon
Cardamom powder – 1/4 teaspoon
Garlic – 6 pods (slice thinly)
Ginger – 1 inch
Method:
Grind the ingredients under to grind to smooth paste. Keep it aside
Cook the rice and spread it in a plate to cool down. Cook the vegetable with bit of salt and keep it aside
Heat the pan add oil, butter. Add cloves, caradamom, Cinnamon, Cashew, Raisins and bay leaves. Add grinded paste.
Fry till oil separate from it. Add cooked vegetables and mix well. Fry for a min
Add cooked rice and mix it well till masala coats well to rice. Add coriander leaves and mix well.
Serve hot
