Kuska Biryani Recipe – Plain Biryani rice – Kuska Rice – Simple one pot meal

This post was lying in my draft for so long for some reason, kept postponing the post. Finally got to it.. If we return home in the middle of the week after our holiday or India trip mostly I wouldn’t have any vegetables. It is easy to pick up onion and tomato from local stores. So making this recipe is easier even without vegetables and it tastes amazing
Ingredients


basmati rice  / Long grain rice – 1 cup
Water – 1 cup
Soya milk – 1 cup (you can replace this with Milk, Coconut milk)
Onion – 1 (Finely chopped)
Tomato – 1 (Finely chopped)
Ginger garlic paste – 1 teaspoon
Bay leaves – 1
Cloves – 1
cardamom – 1 or 2
Cinnamon – 1/2 inch piece
Coriander powder – 1/2 teaspoon
Red chilli powder – 1 teaspoon (adjust to your spice level)
Cumin powder – 1/2 teaspoon
Oil / Ghee – 3 teaspoon
Salt to taste
Coriander leaves – 2 tablespoon
Mint leaves – 2 teaspoon 



Method:


Wash and soak the rice for 10 mins.  Drain the water. Leave it aside. Heat the pan add oil / Ghee. Add Bay leaves, cardamom, cinnamon, cloves and fry till nice aroma comes. Add onion. Fry till transparent. Add tomatoes and ginger garlic paste. Fry till Tomatoes are mushy. 

Now add cumin powder, coriander powder and red chilli powder. Add Mint leaves and coriander leaves. Fry for a min. Add salt, water, soya milk. Mix well. Now add Rice and mix well close the lid and cook the rice. It will take about 10-12 mins. Garnish it with coriander leaves

Kuska is ready to be served!
