Are you bored with normal vegetable biryani or vegetable fried rice?. Then this can be very good alternative…I always associate keralite cuisine with Coconut based recipes.. Last time when I visited my friend in India who is from Kerala did this biryani and it tasted good.It was done without coconut. So Took down the recipe and tried at home. Now back to recipe
Ingredients
For Rice
Basmati Rice – 1 cup
Bay leaves – 1
Cardamom – 3
Cloves – 3
Cinnamon – 1 inch
Ghee – 1 teaspoon
Green chillies – 3 (slit into two)
For Gravy:
Mixed vegetable – 1.5 cups (I have used beans, carrot and cauliflower)
Bay leaves – 1
Kalpasi / black stone flower – 2
Cloves – 3
Cinnamon – 1 inch
Star / Ani seed – 1
Salt to taste
turmeric powder – 1/4 teaspoon
Chilli powder (Dry red) – 1 teaspoon (adjust to spice level)
Yogurt – 1/4 cup
Onion – 3/4 big (sliced thinly)
Tomato – 1 (finely chopped)
Ginger paste – 1 teaspoon
Garlic – 2 teaspoon
Oil – 2 teaspoon
For Garnishing
Cashewnuts – 1 tablespoon
Onion – 1/4 (sliced thinly)
Raisin – 2 teaspoon
Coriander leaves – 1 tablespoon (Finely chopped)
Method:
First Wash and soak the rice for 10 mins. Drain it. Heat ghee in a pan add all masala items under rice section and fry till nice aroma released. Add rice and mix well. Fry for a min. Add 2 cup of water
Close the lid. Let it cook. Once cooked fluff it with fork. Set aside
Fry Cashew, Raisin and Onion and keep it aside. Add oil in a pan and add bay leaf, Cinnamon, cloves, Star seed, Kal pasi and fry till nice aroma released. Add onion and fry till transparent.
Add ginger garlic paste and fry till raw smell goes off. Add Tomatoes and salt. Fry till mushy.
Add turmeric powder and red chillies. And fry for 2 mins. Add Vegetables and mix well. Add yogurt and mix well. Let the vegetables cook
Now let’s arrange the dish. Take a deep dish and arrange a layer of rice and place cooked vegetable on top of it. Add more rice on top of it. And Top it off with Cashew, Onion, raisin and coriander leaves.
Cover it with aluminium foil and place a plate and heavy stone on top of it. Leave it aside for 20 mins
Take it out and mix it up
Serve hot
