Mappillai samba idli dosa

Mappillai samba rice idli dosa is one of traditional healthy breakfast/ dinner recipe. In this recipe I have used 50% Mappillai samba rice 50% regular Idli rice. I haven’t tried with 100%. Also I have used grinder to grind the batter. you can do it in Mixie / blender too. I have used traditional Idli maker but you can make idli in idli cooker too. Using same batter you could make uttappam.

 

What is Mappillai Sambar Rice?

 

Mappillai Samba Rice is Tamil Nadu native rice. It is translated literally as “bridegroom rice”. It is red in color but different from Red rice. Mappillai samba rice is rich in Iron, Zinc and Fiber.

 

How to Ferment Idli batter

 

There are many ways you can ferment the batter. If you live in tropical place like Singapore you can just leave it on counter top for 4-6 hrs. However soaking rice, urad dal overnight gives good batter that result in soft idli. If you are in colder place you can place grinded batter in closed warm place or preheated oven or under oven light

Ingredients for making Mapillai samba Idli/ Dosa:

 

  • Idly rice- 1.75 cup
  • Mappillai Samba rice -1.25 cup
  • Urad dal – 3/4 cup
  • Fenugreek seeds-1/4 teaspoon
  • Salt to taste
  • Oil for cooking dosa

Mappillai Samba Rice Idli Dosa Recipe

 

Step by step instruction to make Mapillai samba idli/ dosa

 

Step 1: Wash and soak rice or Mappillai Samba rice together for 6-7 hrs or overnight

 

 

Step 2: wash and soak urad dal & fenugreek seeds together for 6-7 hrs or overnight

 

 

Step3: Grind urad dhal till fluffy by adding cold water at regular intervals. Remove it Grind rice with required water(add water at regular interval)Add urad dal batter, salt and grind for 2 more mins.

 

 

Step 4: Remove it. Let it ferment for 5-7 hrs

 

 

Step 5: Heat water in Idli pan.  pour batter.

 

     

 

Step 6: Cook for 10-13 mins or till inserted stick comes out clean.

 

 

 

Step 7: Let it cool down for a min. Remove it. Serve hot

 

Step 8: heat dosa pan. Pour the batter and spread outward to get nice crisp dosa. Drizzle oil around it. Let it cook till dosa browned slightly

 

 

Step 9: Once done remove it and serve hot

 

Notes

 

  • Make sure you don’t add lot of water
  • Grind the Urad dal by adding water little by little to get fluffy batter
  • You can try with full measurement of Mappillai samba rice
  • Dosa came out super crispy
  • You can apply ghee for dosa instead of oil
