Margherita Sauce recipe

Nothing beats homemade sauces. I was Travelling last week. Most of the options available for vegetarian is Italian cuisine. I cannot eat cheesy pizza and pasta continuously so I have asked for simple pasta and I loved the taste of it. They told me it is simple Margherita sauce. I was totally impressed. So I decided to give it a try. I wanted to try out this sauce with fresh tomatoes as I had fully ripped tomatoes at home. You can do it with store brought tomato puree also. 
Ingredients


Tomatoes – 12-14 medium size ripe tomatoes + few cherry tomatoes or Crushed tomatoes – 1 can (28 ounce)
Onion – 1 tablespoon
Garlic – 5-7 pods (slice it thinly)
Salt to taste
Pepper powder to taste ( I have added about 1 teaspoon)
Dried Oregano – 1/4 teaspoon
Dried basil- 1/4 teaspoon (you can use mixed Italian herbs too)
Sugar – 1 teaspoon
Olive oil – 1/4 cup



Method


If you are using canned tomatoes skip this step. Heat the water and add Tomatoes to it Let it cook till you see cracks in the skin. Switch it off and let it cool down. Remove the skin and mash it roughly. Keep it aside

Heat the pan and add oil. when it is hot add onion and garlic. Fry till they are slight brown in color. Now add mashed tomatoes. Add all the other ingredients. Mix it well. Let it boil till you got thick sauce.

Now it is ready for you to use
