Mushroom Pav Bhaji Recipe | Vegetable Gravy Recipe | Famous Indian Street Food Recipe By Veena Theagarajan

I have posted regular pav bhaji masala, Paneer Pav Bhaji Masala in my space.As I stated in that post you can make numerous variations. Even though the masalas are same the addition of different vegetable or paneer really makes difference to the Bhaji. This Pav bhaji style mushroom really goes well with rice, roti or bread or Pav. In this I had used different mix of vegetables
Ingredients:

Mixed vegetables – 2 cups (I have used Capsicum, Peas, Broccoli. Chop the vegetable finely)
Button Mushroom – 350g (Sliced thinly)
Cooked Potato – 2 (Mashed)

Onion – 1 (finely chopped)
Tomatoes – 2 (finely chopped)
Garlic – 4 pods (Chopped finely)
Ginger – 1 inch (chopped finely)
Pav Bhaji masala – 2 teaspoon
Garam masala – 1/4 teaspoon
Green chillies – 2
Red chilli powder – 1 teaspoon (adjust to your spiciness)
Salt to taste
Cumin seeds – 1 teaspoon
oil – 3 teaspoon
Spring onion – 1 tablespoon


Method:

Clean and slice the mushrooms. Keep it aside
Heat the pan and add 2 teaspoon of oil. Add garlic and ginger fry till garlic is brown in color. Add Onion and fry till they are transparent. Add tomatoes and fry till mushy. Add turmeric powder, red chilli powder, garam masala, pav bhaji masala and fry till nice aroma is released. Switch it off and let it cool down. grind it to smooth paste.

Heat the kada with rest of the oil. Add cumin seeds let it crackle. Add grinded paste Fry for 1 min. Add mushroom and cook well.

Add all other vegetables and required salt. Mix well. You can cook it by closing lid or transfer to pressure cooker and cook till 3 whistle ( I used cooker). When cooker cool down completely open the lid and start the flame in low flame. Mash the vegetable. Add grated paneer. Mix well. Cook for another 3-4 mins. Add Spring onion and switch off the flame.

Serve hot with roti / bread / Pav
