The idea of Pomegranate was lingering in my mind for a while but was hesitating because it might have thuvarppu ( When I was searching for the English word for this I found – astringent.. if it is not right word pls let me know). finally, I decided to give it a try and add coconut milk to counter Thuvarppu taste. I was crossing my finger until I finish and taste the rice. It came out pretty good. I have made this a few times after this.
Ingredients
Basmati rice – 1cup
pomegranate juice – 1 cup (just with seeds)
Coconut milk – 1 cup
mixed vegetables – 1/2 cup (beans, carrot)
Oil – 1 teaspoon (coconut oil)
Bay leaf – 1
Cumin seeds – 1 teaspoon
Cinnamon – 1 inch
clove – 2
star spice – 1
Chili paste – 1 teaspoon
salt to taste
mint leaves – 10
Coriander leaves – 1 tablespoon
fried onion – 2 tablespoon
Method:
wash and soak rice for 10 mins. drain water and keep it aside. heat oil. Add cumin seeds, bay leaf, clove, star spice. Add vegetables and salt, chili paste
fry for a min in low flame. add mint leaves. Mix well. Add juice, Coconut milk
Adjust salt and cook it for 3-4 mins. add rice, adjust salt mix well. Close the lid to cook the rice. switch it off
Once cooked add coriander leaves and fried onion. Mix well
Serve hot
