Fresh Turmeric Rasam – Turmeric recipes – Immunity boosting recipes

I ordered fresh turmeric to try few turmeric recipes. Rasam is always known as the best food/ drink to fight any infection or soar throat or fever.  Even though I make rasam almost every day my sons take it only when they are sick. In recent days if you search for food that helps to fight COVID-19 you see Rasam topping up the results. I am not sure how much it is true but I am sure back home Rasam is given to people who are down with fever. I also think because of the spices in it like Pepper, cumin, turmeric, tamarind & garlic it does help. In normal rasam, I add Turmeric powder but the addition of fresh turmeric gives a nice flavor

Ingredients:


fresh turmeric – 2 tablespoons (Chopped)
grated coconut -1/4 cup
Grated garlic – 1 tablespoon
grated Tomatoes – 2 tablespoons (1 small tomato)
Toor Dal – 1 tablespoon
Tamarind water -1 cup (from small marbled size tamarind)
Oil – 3 teaspoon (I have used Coconut oil)
Mustard seeds – 1 teaspoon
cumin Seeds – 1 teaspoon
Curry leaves – 10
Green chili – 2-3 (Adjust to your spice level)
Coriander leaves – 1 tablespoon
Salt to taste
Rasam powder – 1 teaspoon
Shallots – 2 (chopped)
hing – 1/8 teaspoon


Method

Heat 1.5 teaspoons of oil. Add chopped turmeric. Fry for 2 mins. Add grated coconut. Switch it off

Once Cool down grind to smooth paste. 

In a vessel add cooked dal/dal water. Tamarind water.

Add grated garlic, tomatoes coriander leaves and required salt. Add rasam powder & hing. Mix well. In a separate flame, let’s do the tempering. Add the rest of oil add mustard seeds, cumin seeds. Let it pop. Add curry leaves, green chili, Onion. Fry for a min. 

Add the grounded paste to the rasam mix well. Add Tempering Heat it

Let the rasam foam. Switch it off. Close it with lid for 10 mins before serving
