Puff pastry base dishes are my go to recipes for quick snacks / even dinner. Sometime I cannot decide till very late what to do for our dinner. Those days if I have any dosa / idli it becomes handy otherwise it is so difficult to come up with last min option. Those days this Puff pastry comes handy. Other day it is almost 6+ and I didn;t even decide what to do for Dinner. Our dinner time is around 7. Luckily I had all the vegetables in the fridge You can use your favourite vegetables. I have used store brought Puff pastry. You can use Naan or your favourite base
Ingredients:
Mixed Capsicum – 1/2 of each color (Green, Red, Yellow. slice it thinly)
Onion – 1 (slice it long thin slices)
Garlic – 1 tablespoon (sliced thinly)
Tomato – 1 (slice it thinly)
Mushroom – 200g
Salt to taste
Italian mixed herb – 1 teaspoon
Pepper powder – 1/2 teaspoon
Red chillies flakes – 1/2 teaspoon or as required
Olive oil – 3 teaspoon
tomato Sauce – as required (optional)
Grated cheese – 1/4 cup or as required
Puff Sheets – 2
Method
Heat oil in pan and add Salt, Capsicum fry till it cooked (don’t over cook). Remove it. In the same pan add Onion and fry till slight brown. Remove it. Add Sliced Garlic and fry till brown color
De frost Puff pastry. Pre heat oven at 180 degree C. Cut puff pastry to desired size / shape.
Bake the puff pastry at 180 degree for 6 mins. Turn the pastry.
Arrange all the vegetables and sliced tomatoes. Sprinkle Cheese. Bake it again at 180 degree C till cheese melts
