My kids love to have pasta / Noodles at least once a week. I try to sneak in some vegetable base sauce/ Pesto in it. That’s one of quick way to get your fussy eater to have vegetables without complaining (at least in my case). I saw this recipe in Preeti’s space. I made some changes to the recipe to suit our family. My kids loved it .. I made this couple of times after the first try. I’ve used longer version of noodle, Penne pasta too. All tasted good. So you can use pasta of your choice
Ingredients
Pasta – 300 g
Pumpkin – 1.5 cup grated
Onion – 1 (chopped finely)
Tomatoes – 3 (Sliced thinly)
Chilli powder – 1/2 teaspoon (Adjust to your spice level)
Garam masala – 1/2 teaspoon
Mixed vegetable – 2 cups (chopped finely)
Salt to taste
Oil – 1 tablespoon (Olive oil)
Coriander leaves – 1 tablespoon
Italian mixed herb – 1/2 teaspoon
Oregano – 1/2 teaspoon
Red flakes – 1/2 teaspoon
Method:
Cook the pasta per instructions and keep it aside
Grind Tomatoes and keep it aside.
Add 1 teaspoon of oil. Add onion and fry till transparent. add grated pumpkin and fry till it is cooked.
Add Chilli powder, garam masala and mix well. Add Italian Mix, Oregano, Red flakes and Salt.Mix well. Switch it off and let it cool down. Grind to smooth paste.
Heat Pan and add tomato paste. Let it boil. Add sliced mix vegetables and salt.
Let it cook and grinded paste. Mix well. Let it boil. Add some coriander leaves and mix well
Add cooked pasta. mix well. Add rest of coriander leaves and mix well
Serve hot
