Rava Appalu is famous Andhra sweet done during pooja/ festivals for naivedyam. This is super simple recipe. This famous Andhra dish is new to me. When I saw this it is sounded like Kesari. And my hubby is big fan of kesari. So I wanted to try this with jaggery instead of regular sugar. This is super simple dessert/ sweets. No need to worry about sugar syrup consistency. so even if you are a beginner in kitchen you can try this. Color of this dark because of the quality of Jaggery. Ingredients for making Rava Appalu
- Rava / sooji / Semolina – 3/4 cup
- Cardamom powder – 1/4 teaspoon
- Jaggery – 3/4 cup to 1 cup
- salt to taste
- Ghee – 3 Teaspoon
- Oil to fry
Step by step instruction to make Rava Appalu
step 1: Fry rava till nice aroma release in 1 teaspoon of ghee. Keep it aside.
step 2: Heat jaggery with 2 cups of water ( My jaggery was good so didn’t filter it.If you have impurity in jaggery drain to remove the impurities. ). Bring it boil
step 3: Add fried rava and mix well without lumps. Cook it in medium flame for 3-5 mins
step 4: Add a teaspoon of ghee. Mix well. Remove it.
step 5: Apply ghee in hand and knead well. Take marble size balls flatten it. Keep it aside
step 6: Heat oil for deep fry. Place the Appalu Fry till golden brown. Remove from oil. Place it in kitchen tissue

Notes
- You can do this with sugar also.
- you can replace the rava with rice flour too
- Make sure the Halwa/ cooked kesari is not watery
