Srilankan Pumpkin curry – Jaffna Style Pumpkin Curry – Pumpkin recipes – Curry recipe

We had pumpkin from the downstairs garden. I was looking for some recipe with pumpkin (other than sambar, paal kootu, Dosa, paratha). My friend helper who is from Srilanka gave this recipe. It is perfect for steamed rice or paratha. It is very simple yet flavourful. I find this curry has all flavours in the right composition. So this perfectly goes well with rice or roti. Ingredients:



Pumpkin – 250g
small onion / Shallots – 10 (slice it)
Green chilies – 5
Red chili powder – 1/2 teaspoon (Adjust to spice level)
Garlic – 5 pods
Cumin powder – 1/2 teaspoon
Turmeric powder – 1/4 teaspoon
Salt to taste
Tamarind paste – 2 tablespoon
Coconut milk – 1/3 cup
Oil – 1 teaspoon
Mustard seeds – 1/2 teaspoon
Urad dal – 1 teaspoon
Curry leaves – 10



Method:


In a pan add sliced pumpkin, Garlic, Onion, green chilies, turmeric powder, cumin powder, chili powder and required salt. Add water and cook till Pumpkin is completely cooked

Once cooked Mash it roughly. 

Add tamarind paste and cook for 2 mins

Temper it. Heat oil adds mustard seeds and urad dal. Let it pop. Add curry leaves. Fry for 30 sec

Add it to curry. mix it. Add Coconut milk. When it starts to bubble switch off

Now it is ready to be served
