Tarkari pulao is a popular dish in Karnataka. Tarkari pulav masala is a delicious and flavorful dish. Mint and coriander leaves are ground with the masala. This rice is flavoured with freshly ground masala. I enjoy experimenting with different flavoured rice, especially on weekends when one pot meals are ideal for a lazy day. Even though I prefer sona masuri rice, my sons prefer bastmati, so I use bastmati in the majority of my one-pot meals. This rice will taste better with Sona masuri, so give it a try and let us know what you think.

Step by step instruction to make Tarkari Pulao
Step 1: Grind all the ingredients under tarkari palav masala section with 1/4 cup of water.
Step 2: wash and soak rice for 10 mins. Heat oil and add all the tempering ingredients. Fry till nice aroma released. Add onion, green chili and Tomato and required salt and for a min. Add grounded masala and fry till nice aroma released
Step 3: Add all the vegetables, salt and required water. I have added 1.5 cup of water. Adjust salt and let it boil.
Step 4: Drain water from rice and add to the boiling mixture. Cook it till rice is done. If you are using pressure pan cook at medium flame for 2 whistles. Let it cool down. Once it is ready to open open the lid and mix well. Add peanuts , Fried Onion, coriander leaves & mint leaves. Mix well again.
Step 5: Serve hot with your favorite raita
Notes
You can replace the vegetables with your favourite ones.
Vegetables and masala paste can be pre prepared. If pre prepared pls. keep it in fridge
To enhance nutritional value you can add Soya chunks while cooking the vegetables. Before adding blanch them in hot water
Can I have this if i am on diet? the answer is big fat YES! You can have this rice even if you are on diet by reducing the rice and increasing the vegetables
