Tomato Pasta Sauce

When I go to Pizza hut I always order Veg Pasta. My kids love it too. My kids love the pasta in any form. I love homemade tomato sauce. Because I can control the ingredients in it. I love to add more vegetables to the sauce (sneak in more vegetables for the kids). So my sauce is more thick if you prefer to have less vegetables reduce the vegetables. I have reduce the onion in this because of my first son. If you prefer more onion you can add more. 
Ingredients:


Tomato – 6 (medium size)
Onion – 1
Mixed vegetables – 2 cups ( I have used beans, carrot, capsicum, zucchini, Cabbage)
Garlic – 10 pods
Pepper powder – 1 teaspoon
Italian seasoning – 1 teaspoon
Red chilli flakes – 1/2 teaspoon
Salt per taste
Olive oil – 1 tablespoon
Tomato sauce – 1 tablespoon
Parsley – 1 tablespoon (finely chopped)



Method:


Blanch tomatoes. For that heat the water and when it is boiling drop in the tomatoes and cook till the skin break. switch it off. Remove the skin and let it cool down. Grind to smooth paste

Heat the kada and add oil. When the oil is hot add garlic and fry for 3-4 mins (till slight brown). Add onion and fry till they are slight brown color. Add all the vegetables and salt. add 1/2 cup of water. Let the vegetables get cooked. Cook it by closing the lid. 

Add Tomato paste, Tomato sauce and mix well. Add pepper, Red chilli flake, Italian seasoning and mix well. Let it boil for another 3-5 mins. Add Parsley leaves and mix well. 

Switch it off. This can be kept in airtight container and in the fridge for 4-6 days
