I love soya. I add soya products to our cooking whenever possible. Once when I was at lunch people were taking so high about Keema biryani.. One of my friend who is vegetarian was talking about it too. I was wondering how come she had tasted Kheema / Keema biryani. Later I asked her for the recipe.. Here you go with the recipe
Ingredients
For cooking rice:
Basmati rice – 1 cup
Salt as required
Rose water – 1 tablespoon
For Gravy:
Soya Granuels – 1 cup (same qty as rice. If you don’t have Use Soya Chunks and run in blender / food processor to get granuels. Make sure you still keep good chunks)
Yogurt – 1 cup
Ginger paste – 1/2 teaspoon
Garlic – 2 teaspoon
Onion – 1 (sliced thinly)
Milk – 1/2 cup
Oil / Ghee – 2 teaspoon
Coriander Powder – 1 teaspon
Chilli powder – 2 teaspoon
Garam masala – 1 teaspoon
Shahi jeera – 1/2 teaspoon
Bay leaf – 1
Cardamom – 2
Cinnamon – 1 inch
Cloves – 3
For Arranging Rice
Blanched and sliced Almonds – 3 tablespoon (reserve 1 tablespoon for garnishing)
Mint leaves – Handful (chopped)
Coriander leaves – 1/4 cup (reserve 1 teaspoon for garnishing)
Method:
Boil the water and salt. Add Soya Granuels and boil for 3 mins. Drain the excess water
Wash the rice and drain the water. Boil 3 cup of water with salt and rose water. Add washed rice
Close the lid and cook till 80% done
Drain the extra water and keep it aside
Heat the Ghee / Oil. Add Sliced almond and fry till slight brown in color.Remove from oil and Keep it aside.
Put all masala items. Shahi jeera, bay leaf, cardamon, Cinnamon, Cloves. And fry till nice aroma released. Add onion and fry till transparent. Add ginger garlic paste and fry till nice aroma released
Fry till raw smell is released. Add Soya Granuels and cook for 3 mins.Add All the masala powder (Garam masala, Coriander and chilli powder). Fry till nice aroma released
Reduce the flame completely.Add whisked yogurt let it cook. Add 1/2 up of milk and cook for another min
Now take a pan Place 1/2 of rice. On top add 1/2 of kheema gravy. Add 1/2 of roasted almond and 1/2 of coriander leaves. Now add rest of the rice. Top it of with rest of gravy and rice, coriander leaves and roasted almond
Cover it with aluminum foli and keep the weight. cook it in very very low flame for 5-7 mins. Gently fluff it add reserved coriander leaves
Serve hot
