After Beet pesto pasta I started to make pesto pasta with vegetables that my kids don’t like. Peas one of the vegetable which my 2nd son has a huge hatred for. (He takes few pieces of Peas Kachori. No other peas base dish) I wanted to try this peas pesto. I added more Garlic and Onion while making this pesto. It turned out to be excellent. It is very simple too. I added finely chopped Carrot / beans also as my kids eat only dinner at home during school days. You can add / skip based on your preference.
Ingredients
For Pesto
Peas – 2 cups (I have used frozen peas)
Coriander Leaves – 1 cups ( I removed the root and roughly chopped)
Basil Leaves – 1 cup
Walnut – 10
Almond – 20
Small onion – 15
Garlic – 10 pods
Olive oil – 1/4 cup (Olive oil really makes the diff)
Cheddar Cheese or cheese of your choice – 1/2 cup
Green chllies – 4 (adjust to your spice level)
Salt to taste
Pasta
Pasta of your choice – 400 to 500g
Mixed vegetables – 1/2 to 3/4 cup (optional. I have used carrot and beans)
Salt to taste
Method:
Cook the peas with required salt. Arrange rest of ingredients listed under For Pesto section
Grind the all other ingredients except cheese and cooked peas.
Now add Cooked peas and cheese. Grind it to smooth paste. Pesto is ready
Cook Pasta per instructions. Keep it aside.
Cook the finely chopped vegetables if using. Add pesto mix it well.
Now add cooked Pasta.. Mix in cook for a min. Switch it off and Garnish it with your choice
Enjoy the pasta
