Jaggery rice is my go to dish whenever I have a sweet cravings. I saw this on the Fit tuber channel as part of a quick fix for sweet cravings. Jaggery and Ghee are used to make this rice. Make use of high-quality ghee and jaggery. I adore the pairing of jaggery and Ghee. I added coconut to add flavour, but you can leave it out if you prefer. This is a well-known Punjabi dish. If you have a sweet tooth but want to avoid refined sugar, this is an excellent choice.

Ingredients for jaggery rice:
Cooked rice – 1.5 cup (I have used brown rice)
jaggery – 1/2 cup + 2 tablespoon
Ghee – 3 teaspoon
Cashewnuts – 1 tablespoon
sesame seeds – 1 tablespoon
raisin – 2 teaspoon
cardamom powder – 1/2 teaspoon
coconut – 1/4 cup
Step by step instruction to make Jaggery Rice:
Step 1: Heat ghee. Add cashew fry till slight brown color. Add raisin and fry till puffs up. Remove it

Step 2: Heat jaggery with 1/4 cup of water till it melts. Add Coconut
Step 3: Add Cooked rice mix well. Add cardamom, Fried nuts
Step 4: Mix well. switch it off. If you fry for long rice will become hard

Notes
- You can use both brown and white rice for this
- After adding rice cooking long time will result in crispy & hardened rice
- Don’t reheat left over rice (after refrigeration have it as cold)
