Pizza Muffin is a delicious and easy-to-make snack that combines the flavors of pizza with the convenience of a muffin. They’re perfect for a quick and satisfying meal or snack, and can be customized with your favorite toppings to make them even more delicious.
I wanted to bake this for my kid’s breakfast. Pizza Muffin is a recipe without any egg or butter. I was not sure how the kids would like it. It turned out to be a good option for packing to school. I have added all three colours of capsicum but you can add your kids’ favourite vegetables.
My kids are not big fans of corn so I didn’t add but you can add vegetables of your choice.this recipe is with olive oil but you can add any cooking oil. Wheat flour and all purpose flour is used in this recipe . I haven’t baked a whole wheat pizza muffin maybe you can try

Ingredients to make Pizza muffin :
- All-purpose flour – 1 cup
- Wheat flour – 1/2 cup
- baking soda – 1/4 teaspoon
- baking powder – 1 teaspoon
- Salt – 1/4 teaspoon
- Mixed Bell pepper – 1 cup (I have used all 3 colours)
- Tomatoes – 2 teaspoon
- Tomato sauce – 1 tablespoon
- red chilli flakes – 1/2 teaspoon
- Mixed Italian Herb – 1 teaspoon
- Pepper to taste
- Cheese – As needed (I have used 1/2 cup)
- olive oil – 1/2 cup
- Curd – 1/4 cup
- Milk – 3/4 cup
Step By Step to make Pizza Muffin:
Sift all-purpose flour, wheat flour, salt, baking soda, baking powder. Add Italian herb and mix well.
In a broader bowl add olive oil, milk, curd, 2 teaspoons of Tomato sauce, 1 tablespoon of Cheese. mix well
Fold dry ingredients to wet gently. Add half of Bell peppers. Fold in
Grease muffin tray and preheat oven at 180 degrees C. Fill each cup with batter till 1/2 add tomato sauce, bell peppers and a bit of cheese. Add more butter and top it off with some more bell peppers and cheese
Bake it at 180 degrees for 15-17 mins or inserted toothpick comes out clean

Can I replace APF with whole wheat flour
I recommend to do it 50% instead of whole as whole wheat will make the muffin denser
For how many days we can keep in room temperature?

hi veena, can i omit either milk or curd since I am a little uncomfortable with using the two together? Or, could you suggest an alternative. thanks
I tried it but baking time taken was about 30 mins.. and one thing which rod you used for baking these?? I used bottom rod for first 20 mins and then 10 mins upper rod in otg.. is that fine??
I hv used conventional oven so I don't hv top and bottom options sorry
