During one of my holiday trips I had tasted Veg briyani and it was simple yet nice. No coconut or nuts and it was purely all the masalas (without typical Biryani masala like Cardamom, Cinnamon etc..) I kind of like it. So I wanted to try and recreate it at home. It came out pretty good. As it is without usual biryani masala my kids liked it too. I have made it with cooked Bastmati rice. You can add any rice or millets.
Ingredients:
Cooked rice – 3 cup
Mixed vegetables – 2 cups
Oil – 3 teaspoon
Onion – 1 (sliced)
Ginger, Garlic paste – 1.5 teaspoon
Turmeric powder – 1/2 teaspoon
Coriander powder – 1 teaspoon
Red chilli powder – 1/2 teaspoon
Cumin seeds – 2 teaspoon
Curry leaves – 10 leaves
Salt to taste
Water – 1/2 cup
Method:
Heat oil and add cumin seeds. Let it crackle add curry leaves. fry for a min. Add Onion and fry till transparent. Add ginger, garlic paste fry till raw smell goes off.
Add vegetables. Add all masala powder. Mix well Add water and cook the vegetables.
Add cooked rice and mix well.
Rice is ready!
