Seeraga Samba Brinji Rice

I wanted simple South Indian style Mixed vegetable biryani. One day, one of my friend brought some mixed vegetable rice. I told her that her veg biryani is nice. Then she commented it is brinji instead. Initially I thought I didn’t hear full then she said it again. Later I have asked her for recipe. She send it to me. I have misplaced it. Then I saw post in Raks Kitchen. It was too tempting. I kind of like the coconut flavour in it. So decided to do it with coconut. I have referred the recipe from Kannama cooks. Modified to my preference.
Ingredients:



Mixed vegetables – 1.5 cups (Carrot, beans, cauliflower, Potato)
Ginger Garlic Paste – 2 teaspoon
Red chilli powder – 1/2 teaspoon
Pepper powder – 1/2 teaspoon
Mint leaves  – 1/4 cup
Coconut Gratings – 1/4 cup (grind to paste)
Fennel seeds – 1/2 teaspoon
Salt to taste
Seeraga samba rice – 1.5 cup
Milk – 1 cup
Onion – 1 (Chopped finely)
tomatoes – 1 (finely chopped)
Oil/ Ghee – 2 teaspoon (ghee works best)
Bay leaves – 2
Cloves – 2
Cinnamon – 1 inch
Star spice – 1
Kal Pasi – black flower- 1
Green Chillies – 1 (slit into 2 . Optional)



Method:


Grind Coconut, fennel seeds, Pepper powder and Red Chilli powder with 1/4 cup milk. 

wash and Soak rice for 10 mins drain it completely leave it aside.

Heat pressure pan with ghee.Add Bay leaves, cloves, cinnamon, star spice, kal pasi. Fry till nice aroma released. Add Onion, salt and fry till brown. Add Ginger, garlic paste. Fry till nice aroma released. Add tomatoes fry till mushy. Add Green chillies, Mint leaves 

Add mixed vegetable. Add Milk and grinded paste. Mix well. Leave it aside for 1 hr. Check for salt. heat it for 2 mins add water and let it boil. 

Add Rice. Mix well. Close the lid and cook till 2 whistles or 12 mins (whichever is early) and switch it off. Don’t disturb for 20 mins atleast. Open the lid and fluff it.
