Vegetarian Coimbatore Style Angannan Biriyani Recipe With Vegetables by Veena Theagarajan



I love one pot meals. Before I start blogging I try few recipes. These days wherever I go I try to look for any new recipe in the menu card (life of food blogger?). I always go for new one and my family will give me strange look (Sounds familiar??) If I like the taste I will finish it if not I leave it out. But my son who is against wasting food will be very upset.. Recently I have more frequent visit to India for work. I have noticed there is lot of Biryani shops around..whenever I see something new I will note down to check the recipe. When searched for the recipe for Angannan I saw this recipe here. I made my little variation.. I have used jeeragasamba rice for this. If you prefer you can use Bastmati rice too

Ingredients:


Jeera rice/Jeeragasamba rice – 1 cup
Onion – 1 (sliced finely)

Small Onion – 10 (chopped finely)Salt-as needed
Soya chunks/meal maker- handful
Vegetable of your choice (I have used Cauliflower)
Tomatoes – 2 (chopped finely)
Garlic – 1/2 teaspoon
Ghee – 1 tablespoon
Cinnamon – 1/2 inch
Cloves – 2
Cardamom – 2
Bay Leaves – 2
Green chillies – 2
Ghee / Oil – 3 teaspoon
Mint Leaves – handful
Coriander Leaves – 1/2 cup


To grind

Small onion – 20 
Garlic – 15 Pods
Ginger – 1 inch
Green chilles – 4
Cinnamon – 1/2 inch
Cardamom – 2
Clove – 2


Method:

Wash and soak the rice for 30 mins. Drain the water and keep it aside
Grind the ingredients under to grind section. Keep it aside

Heat Ghee / oil in a pan. Add Bay Leaves, Cardamom, Cloves fry till nice aroma released. Add garlic and fry till slight brown color. Add Onion and fry till transparent. Add Grinded paste and fry till nice aroma released

Add tomatoes, green chillies and fry till mushy. Add Green chillies and fry for a min. Add Mint and Coriander leaves.

Add vegetable (whatever you want to add) and Soya Chunks. Mix well. Add 2 cup of water and required salt. Let it boil. Add soaked rice

Let it boil. Add rice and cook it by closing the lid. 


Switch it off and Cover it with Aluminium foil. Place a plate and keep the heavy object on top of it. Leave it for 30 mins

Serve hot
