Kathal Veg Biryani – Lunch Recipe

Raw jackfruit base poriyal / sambar is something I got introduced to by my friend during college days. My mum never makes it. So after blogging when I see Kathal biryani in blog post I have always wanted to give it a try. It has been in my to do list for a long time. During early days in Singapore I see cut raw jackfruit so I was looking for it for quite sometime. During my last week grocery trip I saw this beautiful raw jackfruit and even though it was not cut I had decided to buy it. Kids loved this biryani.
Ingredients:

 

For Rice
Bastmati rice – 1.5 cups
cardamom – 2
bay leaves – 1
clove – 3
cinnamon – 1 inch
Star spice – 1
Kal pasi (stone flower) – 3
rose water – 3 tablespoon
Oil – 1 teaspoon
Salt to taste
 
For Kathal masala
Jackfruit – 2 cups
Onion – 1
Tomatoes – 1
Ginger paste – 1/4 teaspoon
Garlic paste – 1 tablespoon
Ghee / oil – 3 tablespoon
Salt to taste
Coriander leaves – 1/2 cup + 1 tablespoon for decoration
Mint leaves – 15 leaves
Coriander powder – 2 teaspoon
Turmeric powder – 1/2 teaspoon
garam masala – 1/2 teaspoon
Green chillies – 1 (slit into 2)
cumin seeds – 1 teaspoon
yogurt – 1/2 cup (fresh one)

 
Method:
 
Oil hand, chopping board, knife. Cut the jackfruit. Remove seeds (if it is big) you can add seeds to other vegetable dish. Place the cut jackfruit in a water till you need it.
Heat ghee/oil. Add Cumin seeds. Let it crackle. Add onion, Green chillies and fry till brown in color. Add  ginger garlic paste. Fry till raw smell goes off. Add Tomatoes and fry till mushy

Add Coriander leaves, Mint leaves. Mix well. Add coriander powder, garam masala, turmeric powder. Fry till raw smell goes off

Add Jackfruit. Mix well. Continue to cook for 4-5 mins. Reduce flame add beaten yogurt.

Add 1/2 cup of water. continue to cook till oil separates from masala. Switch it off. Now masala is ready

Boil water with all the spices under rice section. Add Rice

Let’s cook rice 80% with water and rest of ingredients under rice section. Drain it. Remove the masalas

Now layer cooked rice and gravy. close it with tight lid. Place it on flat tawa cook in low flame for 10 mins.

Once done open it and mix it gently

serve hot!
