I was inspired to try raw jackfruit recipes after reading about its high protein content. It is a good source of protein, especially for vegetarian and vegan diets. Growing up, I had never tried raw jackfruit recipes.
However, when I was in junior college, I used to get a tiffin box from a friend/cousin aunty, who makes delicious fry and sambar with raw jackfruit. I’m still waiting for her to give me the recipe. I’ll get it up soon.
I recently experimented with canned raw jackfruit. It didn’t sit well with me. So when I had the opportunity to order a new one, I did so right away. I previously posted a recipe for Kathal briyani / jackfruit briyani. This one can be served as a side dish with rice or as a stuffing for bread or a wrap. I made a wrap for this post.
Ingredients
For Stuffing:
- Raw jackfruit – 1 cup (in the pic you will see more as I brought whole fruit I have cooked and used it for 2 diff recipes)
- Potato – 2 (small size)
- Onion – 2 (sliced)
- Tomato – 2 (sliced)
- Ginger paste – 1/2 teaspoon
- Garlic – 1 tablespoon
- Soaked cashew – 10 (soak it in hot water for 30 mins)
- Turmeric powder – 1/2 teaspoon + 1/2 teaspoon
- Chili powder – 1 teaspoon (adjust to spice level)
- Garam masala – 1 teaspoon
- Chicken masala powder – 1 tablespoon (adjust to your spice level)
- Salt to taste
- Oil – 2 tablespoons (adjust to spice level)
- Coriander leaves – 2 tablespoons
Wrap
Tortilla wrap – 4-6
Butter as needed
Method:
In a pressure cooker take cleaned and cut jackfruit. Add salt and turmeric powder. Cook it till 3 whistles. switch it off. Let it cool down.
When it is ok to open, open the lid and drain extra water. Keep it aside. In a pan add 1 tablespoon of oil add onion, salt. Fry till transparent. Add tomato fry till mushy.
Add ginger-garlic paste. Mix well. Fry for another 2-3 mins. Add Turmeric powder, chili powder, garam masala, and chicken masala powder. Fry till the raw smell goes off.
Heat 1 tablespoon add sliced potato, salt, and fry till it is crisp and cooked. Remove it keep it aside. Once cool down grind to smooth paste.
Add 1 teaspoon of oil. Add ground masala paste. Fry for 2 mins in low flame. Add cooked raw jackfruit and mix well. cook for 2 mins.
Add Potato and mix well. Cook till slightly roasted. Add coriander leaves. Mix well.
Heat flat pan and place tortilla spread the stuffing roll it and toast.
Serve it with preferred sauce
