Sabut Urad Dal – Is simple dal recipe done with whole (black) urad dal. It taste different from Dal Makhani due to the process and spices used for it. This is famous Punjabi recipe. Sabut dal goes well with rice, roti, pulka, Naan.
Dal is most common recipe in North India and it is a must. There are many different recipes depends on region, family.. It is one of most versatile recipe which can be changed to your preference. You can make this super rich or healthy. Low calorie or high calorie.
This dal is made with usual spices, onion and tomatoes and quite comforting recipe. You do have to soak the dal overnight. The whole cooking process takes about 30-40 mins in pressure cooker. If you make it in open pot it takes long time. Traditional one is done in Pot and slow flame.

Ingredients for making SABUT URAD Dal
- Urad dal – 1 cup (wash and soaked overnight)
- Onion – 1 finely chopped
- Garlic paste – 1 teaspoon
- Ginger paste – 1/2 teaspoon
- Green chili – 1
- Tomato – 1 ( chopped)
- Turmeric powder – 1/2 teaspoon
- Coriander powder – 1 tablespoon
- Cumin powder – 1/2 teaspoon
- Garam masala – 3/4 teaspoon
- Salt to taste
- Coriander leaves – 1 tablespoon (finely chopped)
For Tempering
- Cinnamon – 1 inch
- Bay leaf – 1
- Cardamom – 1
- Star spice – 1
- Oil – 2 tablespoon
- Cumin seeds – 1 tablespoon
Step by step instruction to make SABUT URAD DAL
Step 1: Heat oil. Add Cinnamon, Bayleaf, Cardamom, Star spice. Add Cumin seeds. let it crackle. Add onion and garlic, Ginger paste. Fry for a min. Add tomatoes fry for another min
Step 2: Add turmeric powder, coriander powder, garam masala, roasted cumin powder & required salt. Fry for a min. Add water. Let it boil
Step 3: Add soaked urad dal and required water. adjust Salt. Pressure cook for 8-10 whistles
Step 4: Switch it off. Let it cool down. Open the lid. Mash the dal with potato masher. Heat again add coriander leaves.
Step 6: It is ready to be served!
Notes
- You can replace oil with Ghee for richer taste
- Adjust the spices as per your taste
- Soaking the Urad dal is a must
- Also this dal can be made thick or thin depending on what you prefer.
- This can be made in instant pot also. While making instant pot adjust water accordingly
